You are going to put your nose and your tongue to the test. You will put on the apron and do the same thing that professional tasters do before exporting the coffee. You are going to smell the freshly ground coffee, break the “crust” (the layer of wet coffee) to release the aromas, and then you will use a cupping spoon to make a loud sip that sprays your entire palate. At the end, you will play at guessing what each cup tastes like, combining it with a delicious piece of local chocolate to see how the flavors explode in your mouth.

  • Step 1: Welcome & Introduction We welcome you at La Casa de Café. The barista briefly tells you the history of coffee in Colombia and explains why Antioquia has such special beans.
  • Step 2: Aroma Training We do a sensory game. The barista gives you jars with different aromas to smell (vanilla, lemon, panela, nuts) so that you “wake up” your nose before starting to taste.
  • Step 3: Analysis of Fragrance and Aroma. We start with 3 cups of distinct coffee varieties. You'll analyze the dry grounds first; then, after the barista pours the hot water, you’ll evaluate the wet aroma. You won’t believe how much the scent profiles change!
  • Paso 4: El Ritual de la Cata. Next, we 'break the crust' with a spoon. Your barista will teach you the professional slurping technique to aerate the coffee across your palate. Together, we’ll evaluate the acidity, sweetness, and body whether light or heavy of each of the 3 coffees.
  • Step 5: The Magic of the Methods. Your barista will take the group’s favorite coffee from the tasting and brew it using an elegant manual method like a Japanese siphon, Chemex, or V60 while explaining exactly how different brewing techniques completely transform the final flavor profile.
  • Step 6: Sweet Pairing & Wrap Up We taste that final cup accompanying it with a local sweet (70% chocolate or an artisanal cookie). There is an open space for questions, purchase of souvenirs, and farewell.
